Hey Sugar Beet! Today, I’m celebrating the world’s cutest vegetable! ( First runner up is obvs the ever adorable artichoke, in case anyone’s wondering.)
Speaking of beets, when I awoke this morning I felt as if I’d been beet-en over the head with a bag of angry cats. Not a thing? I eschew “things.” Anywho: I WAS HUNGOVER. In my defense, I thought today was Friday until I got to work this morning. #crushingdisappointment. And I’d had a beautiful boozy night with a dear lady friend: worth it! Nonetheless, I needed an army of little pink livery maids to spiff up my insides stat. Make that liver-y maids…because when it comes to detoxification, you can’t beat the beet!
Each beet-ific root contains magical, rich pigments called betalins that help the liver flush out whatever toxins are clogging up our bodacious bods. In my case, a-a-a-a-alcohol. But I swear, I slurped down these beet-y beverages and proceeded to have a clear-headed, high spirited, damn good day! Thank you beet friends!
These are “recipes” in quotations as I don’t tend to measure juiced/blended things. I taste as I go and you should, too!
Golden Beet, Mint, Cucumber and Basil Juice
1 Golden Beet
Handful of fresh mint
Handful of fresh basil
Lots of kale
1 cucumber
Half a lemon
1 cup of fresh pineapple
So refreshing! I have no idea if betalins hang with golden beets, as they do with good ol’ red beets… but I convinced myself that they do. And regardless, this will make you feel a bit glowier with each yummy sip.
But juice, alone, doesn’t fill this girl up. Onto the next one!
PB and Beet Smoothie
1 small steamed beet (about 1/3 c)
1 c frozen berries (I’m partial to Trader Joe’s Very Cherry Berry Blend)
1 frozen banana, half an avocado or both
Fresh lemon juice to taste
1 orange (if omitted, adjust liquid)
1/3 c peanut flour
Stevia to taste
Pinch of sea salt
Handful of spinach
Liquid as necessary (add slowly… I like mine super thick and lush, so I use very little liquid)
Creamy, dreamy heaven. After my smoothie’s photo sesh, I promptly dumped it in a bowl, smothered it in homemade almond butter and ate it with a spoon. And then… and then I was a new woman. Full of pink power and ready to take on the day!
Aw yeah. And next to that frothy coffee lay my new favorite toy. You need it.
But back to beets: they’re having a moment. Mark my words – beet cocktails will be the next big thing. Golden beet, mint, cucumber & basil mojito. BOOM. And if you omitted the peanut flour, you know what would be fab in that smoothie? Red wine! Beat and berry frozen sangria! Squeal! Who’s down to tox and detox with me at the same time?

I love beets in juice, but have never used them in a smoothies. Beets really are great for hangovers, and your concoction looks delicious. The mint sounds like a wonderful addition.
